My two youngest kids are doing the “Defi moi J’croque” at school and I thought I’d play along with them. My son loves fruits and vegetables, however with my youngest it is a struggle. With her, I’ll be modifying the challenge a bit to get her to at least try new fruits and vegetables. The challenge runs from today until March 27.
Since I’m going to play along with them, I’ve made a bean salad packed with vegetables. I really don’t think they will eat it but it is one of my favorite quick salads that doubles as a quick lunch.
Ingredients
- Cucumber
- Green Onion
- Grated Carrot
- Sun Dried Tomato
- Celery
- Mixed Beans (canned)
- 1/4 Cup Mayonnaise
- 2 tbsp Rice Vinegar
- 1 tbsp sugar
- Salt and pepper to taste
Instructions
- Core cucumbers (you don't want the extra water from the cucumber seeds), grate carrots and cut up any vegetables you'd like to put in your bean salad.
- Put everything in a pretty bowl.
- Whisk Mayonnaise, Rice Vinegar and sugar together and pour over the bean/vegetable and mix.
- Salt and pepper to taste
There you have it. It’s really quite simple. I love simplicity. I used the ingredients I had on hand today but during the summer when the farmer’s markets are full of freshness, I mix it up even more.
